olive oil | 1 tbsp |
red onion, diced | 1 |
garlic cloves, minced | 4 |
diced tomatoes | 12 oz |
black beans, rinsed and drained | 1 can |
vegetable broth | 2 cup |
tomato paste | 2 tbsp |
Sweet Potato, 1/2 inch diced | 1 medium |
ground cumin | 2 tbsp |
chili powder | 2 tsp |
Salt and pepper | To taste |
Chipotle Black Bean and Sweet Potato Chili的做法
Heat oil in large stock pot over medium heat. Add onion and sautee until softened, about 5 minutes. Add garlic and continue to sautee until fragrant, about thirty seconds.
Add all remaining ingredients, mix well and bring to a simmer.
Lower heat and allow to simmer, uncovered for at least thirty minutes, adding a bit of water if mixture becomes too thick.Ladle into bowls and top with scallions, cilantro or avocado slices.
